Mini Bacon Quiches Recipe

When I throw a shower, mini quiches are one of my main go-to’s.  I recently threw a shower for my friend Val, read post here.  Her favorite food happens to be quiche, perfect!  This is a reliable little recipe that you can make for any party.

Mini Bacon Quiches

Ingredients:

Pillsbury Pie crust (comes in pack of 2)

3 eggs

Couple dashes of Salt, Pepper

Dash of nutmeg

1.25 cups of half and half (I use a mixture of half and half and milk)

1 small onion diced and cooked

4 slices of bacon

1-2 cups of shredded cheese of choice

Directions:

Preheat oven to 375. Fry bacon, meanwhile, spray mini quiche (mini muffin) pans with pam. Using a small wine class cut circles out of your crust and place in pan.IMG_0657

To save time, dice up an onion, place in bowl with a little bit of butter and microwave for 30 seconds. Stir, microwave again for another 30 seconds.  IMG_0661

Put a few onions in the bottom of your quiches. Crumble bacon and put it on top of onions. Crack eggs and pour in half and half.  Add in salt, pepper and dash of nutmeg and beat.  Pour egg mixture into  pans, top with cheese. Bake for about 15 minutes.
